Reducing acrylamides
The EU has issued the new regulation (EU) 2017/2158, effective from April 2018. This regulation has the goal to reduce the contents of acrylamide in food and therefore regulates how food is fried.
Acrylamide is formed in starchy foods as asparagine and reducing sugars react when cooked at temperatures above 120 °C and so the new regulation specifies a reduction from the traditional high frying temperature.
As the FOM 330 simultaneously measures both oil quality and temperature, it not only has the benefit of delivering highly consistent foodstuff, it also helps form compliance with the new regulation (EU) 2017/2158 under the ALARA concept (as low as reasonably achievable) in that it becomes an independent audit tool for fry temperature.
